    摘要:

    研究了不同溫度（5,、10,、15、20,、25℃）下,，氣調包裝的雙孢蘑菇呼吸速率隨貯藏時間的變化規(guī)律,。結果表明,，雙孢蘑菇的呼吸速率隨著貯藏時間的延長而不斷降低,，直至達到動態(tài)平衡狀態(tài)。利用Langmuir吸附理論對雙孢蘑菇呼吸速率的測定值進行了解析,，建立了不同貯藏溫度下的呼吸速率模型。結果顯示,，雙孢蘑菇的呼吸速率隨貯藏環(huán)境中O2體積分數的增加而升高,，隨CO2體積分數的增加而降低；最大呼吸速率隨溫度的增加而增加,，且與貯藏溫度之間滿足Arrhenius方程,。

    Abstract:

    The change of respiration rate of Agaricus bisporus , packed in film, with storage time was studied at the storage temperature of 5℃、10℃,、15℃,、20℃ and 25℃. The results indicated that the mushroom respiration rate showed a significant decrease with increasing storage period until dynamic equilibrium. A respiration model of Agaricus bisporus, based on Langmuir adsorption theory, was proposed at different temperatures. The results suggested that the mushroom respiration rate increased with increasing of O2 concentrations, and decreased with increasing of CO2 concentrations. The maximum rate increased with temperature, and the relationship between maximum rate and temperature was well described by the Arrhenius equation.
