    基于近紅外光譜法,,優(yōu)化光纖探頭檢測距離并通過檢測距離調(diào)節(jié)系統(tǒng)和多點(diǎn)同時檢測,設(shè)計(jì)了豬肉水分在線檢測分級系統(tǒng),。首先,,為確定光纖探頭與生鮮豬肉樣品表面間的最佳檢測距離,在13個不同檢測距離下(5~29mm)采集了54個樣品的光譜,,采用多元散射校正方法對原始光譜進(jìn)行預(yù)處理,,分別建立了第1波段(349~1435nm)、第2波段(1037~1761nm)和雙波段結(jié)合3種情況的含水率偏最小二乘回歸模型,,分析了不同檢測距離和不同波段的模型,,確認(rèn)19mm為在線檢測分級裝備的最佳檢測距離。然后,,通過檢測距離實(shí)時調(diào)節(jié)系統(tǒng)動態(tài)固定最佳檢測距離,,設(shè)計(jì)了雙波段多點(diǎn)同時檢測系統(tǒng),采集45個豬肉樣品在靜態(tài)條件和在線條件下的光譜,,通過比較分析,,兩種情況下預(yù)測結(jié)果相近,從而證實(shí)了所設(shè)計(jì)的在線系統(tǒng)能夠預(yù)測豬肉水分,,并且雙波段融合建模效果優(yōu)于單波段,,預(yù)測結(jié)果為:校正集相關(guān)系數(shù)和校正均方根誤差分別為0.906和0.598,,驗(yàn)證集相關(guān)系數(shù)和預(yù)測均方根誤差分別為0.836和0.402。最后,,利用獨(dú)立的21個豬肉樣品驗(yàn)證豬肉預(yù)測分級模型精度及穩(wěn)定性,,結(jié)果判斷正確率為90.48%,表明可見近紅外光譜法結(jié)合多點(diǎn)檢測能有效地在線檢測豬肉水分并分級,。

    Abstract:

    In order to realize fast, nondestructive and real-time measurement of parameters (moisture) for pork on-line and divide pork into qualified and unqualified class according to GB/T 18394—2010 (pork moisture limit value ≤76.5%), an on-line detection and classification system was designed and developed based on near infrared reflectance spectra. To determine the detecting distance from the probe to the surface of the sample, optimizing platform was set up, which included spectrum acquisition unit, distance detection unit, light source unit, transmission unit and control unit. NIR spectra (349~1761nm) were obtained from 54 samples with different detecting distances in the range of 5~29mm at approximately 2mm intervals under static conditions. Moisture contents were determined by traditional methods and then related with the spectral information by partial least-squares (PLS) regression models with the first band (349~1435nm), the second band (1037~1761nm) and double-band. The result showed that a detecting distance of 19mm was the best to model. Based on optimal distance, spectra were obtained from 45 samples at static state and on-line by adjusting system of detection distance and multi points simultaneous detection, and then two PLS models were established. The optimal correlation coefficients of the model were 0.915 and 0.906, respectively. The two models results were almost the same. It verified the feasibility of predicting pork moisture on-line. In order to verify stability and precision of models for detecting online, NIR spectra were obtained from another 21 samples. The results showed that the NIR spectral range had an excellent ability to predict the content of moisture (R2=0.8367) in pork online and classification accuracy was 90.48%. Results indicated that NIR spectroscopy was a promising technique to roughly predict moisture of intact fresh pork on-line.
